A Tri-Ply construction such as this consists of 2 outer layers of stainless steel, with an inner core of aluminum. The stainless steel give the pans a beautifully polished outlook and is nonreactive, while the aluminum core disk works as the main heat retainer. Aluminum retains heat better than stainless steel, and distributes it evenly. Aluminum is one of those materials (like copper and cast iron) that reacts detrimentally with some kinds of food (like acidic foods). This could even be toxic. The outer layers of stainless steel make sure that no such reactions occur during cooking. But, while aluminum is a great heat conductor, stainless steel conducts heat poorly. It is, as said, nonreactive, and also very hard, smooth and therefore easy to clean and polish. In this way, the Tri-Ply construction puts the two types of materials to their maximum use.
